Here in the Beef Capital of the World (or very near to it, anyway), we don’t shy away from our Texas-sized steaks and burgers. We proudly serve up two-patty beasts with names like “Beltbuster” or “Whopper”—among the many giants on menus as big as the Lone Star State itself. Our steaks can be ordered in sizes up to 72 ounces, in addition to being cooked to the exact temperature and texture you like it.
But even cowboys are frequently secretly fond of a salad.
Enter WTF—short for West Texas Fresh. A cheeky nod to a familiar abbreviation, the name certainly raised eyebrows and interest after shipping containers popped up a while back on the I-40 west frontage road, emblazoned with a neon green logo. Open since August, WTF offers drive-thru, app pick-up, and lunch from downtown via the Drop Point feature in its app. WTF brings fresh, flavorful salads and wraps that are far from your average lettuce-and-dressing affair.
The restaurant’s hearty PanHandle combines crisp lettuces with a satisfying crunch of pumpkin seeds, tangy pickled red onions and sharp cheddar cheese, all topped with sweet roasted cherry tomatoes, colorful bell peppers, black beans and crunchy tortilla strips. The creamy chipotle ranch dressing pulls it all together with a smoky, zesty finish. It’s a meal that’s both filling and packed with flavor.
A delightful mix of fresh and roasted ingredients, the Roasted Peach Salad features juicy roasted peaches, savory roasted cherry tomatoes, and rich blue cheese, complemented by the sweet crunch of candied walnuts. Drizzled with a tangy balsamic vinaigrette, it strikes the perfect balance between sweet, savory and tart—ideal for those who want something a little more adventurous.
Just like the name, the Crunchy is a vibrant mix of romaine lettuce, purple cabbage, cucumber, carrot, celery and pickled red onion that comes together in refreshing, crunchy bites. Paired with a miso-ginger dressing, this salad offers a light, satisfying crunch that’s perfect for a midday pick-me-up.
Of course, diners can add a protein to the salads or wraps: chicken, tempeh, shrimp, buffalo chicken, and yes, of course, steak for a couple dollars extra.
Served all day, WTF’s breakfast burritos (or bowls) offer classics like bacon, egg and cheese and the Clean Burrito, filled with eggs, kale, spinach and Parmesan. Try the Alt Amarillo for something different: turkey sausage, roasted sweet potatoes and eggs wrapped in a tortilla.
Wash it all down with a smoothie: The Super Green blend of baby spinach, kale, banana, avocado, almond milk, coconut milk and almond butter is as nourishing as it is refreshing.
