As a winter storm forces most folks inside this weekend, the Amarillo Symphony Guild hopes supporters soon will be longing for time outdoors. Or, rather, “outdoors.”
This year’s annual Symphony Ball is themed An Evening Under the Grove, and caterers Ruthie Landelius of Black Fig Catering and Jessica Higgins of Girasol are leaning into “earthy flavors and ingredients,” Landelius says.
The Ball, which raises funds to support the Guild’s educational and outreach initiatives, will begin at 6 p.m. Feb. 7 in the Rex Baxter Building on the Amarillo Tri-State Fairgrounds, 3301 S.E. 10th Ave.
“When Jessica … and I came together to plan this menu, we kept coming back to the same feelings: being outside at night, under the trees, and feeling grounded,” says Landelius, also a Brick & Elm contributor. “That became the heart of Symphony Ball’s Evening Under the Grove.”
VIPs will enjoy a trio of passed appetizers: “warm mushroom and Gruyère tartlets, crispy pork rillettes with a bright orange chili sauce, and delicate crab agnolotti,” Landelius says.
Dinner will feature a heritage legume salad and tomato-chutney vinaigrette, and herb-crusted beef tenderloin with black garlic demi-glace and pine-needle compound butter, plus fondant potatoes and thyme-roasted vegetables. Dessert will be a double-chocolate mousse with birch bark caramel, Landelius says.
“We hope the food feels cozy and familiar—meant to be shared, to spark good conversation, and to help everyone settle in and enjoy the night under the grove,” Landelius says.
Individual tickets are $325. Sponsorships are available from $800 to $17,500.
