The Western Horseman Club is hunting for adventurous eaters at its upcoming Saddleback Cellars wine and chef-curated game dinner.
The dinner—set for 6:30 p.m. March 12 at the restaurant, 2501 E. Interstate 40—will feature four courses of nondomesticated meats, plus a bacon-forward dessert.
“We wanted to do something a little different in the area, and by doing a game dinner we are introducing meats that people in Amarillo don’t often experience,” chef-owner Rory Schepisi said. “We want to show people how you can take game meats and make fabulous dishes with them.”
Though the common perception is that game meats may have a more intense—dare I say, “gamier”—flavor, Schepisi said that’s not necessarily the case.
“We want to emphasize the fact that prepared properly they’re actually succulent and delicious,” she said.
Course one, paired with a chardonnay, will feature seared duck medallions with a white stone-fruit salad and white cranberry coulis.
Wild boar ravioli is the centerpiece of course two, served with a mushroom ragu and a merlot.
Alongside Saddleback’s Rancher Red, course three will feature a crispy fried goose egg over a game sausage hash. “Using goose eggs compared to regular chicken eggs will give our guests the experience most haven’t had,” Schepisi said. “Goose eggs are larger eggs with a much richer yolk—a true delicacy.”
Course four, with a cabernet sauvignon, is the showpiece: A venison osso bucco (made from local mule deer) with mashed potatoes, roasted root veggies and a cotton candy foie gras—“the ultimate umami experience,” Schepisi said.
And finally, served with a Bradstown old fashioned, there’s a Ferrero Rocher chocolate cake topped with candied nuts and chocolate-covered bacon.
“Chef Albert Vargas and I are excited to bring these dishes to Amarillo,” Schepisi said. “We don’t get to bring out the culinary specialties very often so we look forward to nights like this.”
