Though Toscana Italian Steakhouse’s primary style is right there in its name, the restaurant’s special dinners offer Chef Marcus Snead and his team a chance to branch out a bit.
That’s what will happen at its next dinner, set for 6:30 p.m. June 4 at the restaurant inside The Barfield, 600 S. Polk St. The Rombauer Vineyards wine dinner will meld inspirations from the vineyard’s Napa Valley origins with Snead’s love of Southern comfort food, said Tiffany Reagan, The Barfield’s director of food and beverage.
Rombauer CEO Bob Knebel will offer insight into the vineyard’s sauvignon blanc, chardonnay, pinot noir, cabernet sauvignon and zinfandel, all of which will be paired with Snead’s dishes.
“We just learned that Bob is retiring and that this will be his last dinner,” Reagan said. “That makes this even more special.”
Courses will include an heirloom tomato salad; soft-shell crab with warm fennel and zucchini; pork belly with popcorn grits, summer squash, peas and pickled green tomato; crisp duck breast with butter beans and pickled peach chow-chow; and an olive oil cake with cherry compote.
“On our special events like our wine and whiskey diners, Chef (Snead) is able to get out of the Italian essence that we have here and use a little more creative freedom—wherever the wind takes us, if you will,” Reagan said. “He does have lots of fun. And it’s a good way for us to get feedback live from guests before we officially post some of these to the menu.”
